I actually expected to gain this week. With the race on the weekend, I took the liberty of eating pasta, pie, and well, everything else, or at least it seemed that way.
Cleaner is better

I was out on my long run Saturday when I realized that I’m still losing weight even though I’m eating more food the last four weeks than I did during the first four. My theory is that I’m eating better. Cleaner. Maybe you can eat more if you eliminate the fake food from your life. Since I’ve incorporated more fruits and vegetables over processed junk (even the diet junk), I’m eating more, feeling more satisfied and generally feeling better. Happier.

I’ve been doing a slow but steady purge of High Fructose Corn Syrup (HFCS) from our house. A large part of that reduction was eliminating soda from my diet. I’m far from perfect on this, and even though some items still live in my pantry and creep into my daily diet (I might have a little thing or Wheat Thin Fiber Select crackers and Baked Lays), I feel really great about making that adjustment. More importantly, I don’t want Sophie to grow up on a steady diet of HFCS.

This is the recipe. I didn’t use puff pastry, and instead made a batch of pie dough from a Martha Stewart recipe, halving the butter. Because half a cup of butter is enough for a pie, right? I’m sure there are more buttery pies out there, but it tasted fine to me.
Blind baking ensured the crust didn’t get soggy on the bottom. I highly recommend this technique.

I’m a little giddy this morning. I stepped on the scale twice, because I couldn’t believe it was telling the truth. I’m not surprised as it’s been in the 90s here for a few days, which is very atypical of U.P. weather.
